Zucchini Bread

3 eggs
2 cups sugar
2 cups zucchini, shredded
1 t. vanilla
Mix together, and then add
3 cups flour
1 t. salt
1 t. baking soda
2 t. cinnamon
¼ t. nutmeg
½ t. baking powder
Pour into loaf pans and bake @ 325* for 1 hr, or until inserted toothpick comes out clean. Yields 2 loaves
